The Pennone di Pasta di Canossa is produced  with  100% Italian semi-whole durum wheat semolina:  the wheat is grown and processed in the Tenuta Cuniola pasta factory  of San Martino, a  Ferrara. The best wheat is selected, cultivated and processed, the production is carried out at km 0, the result is a high quality pasta.

Pasta di Canossa is one  rough and porous artisan pasta, with a consistency that perfectly holds cooking, di  light ocher color, characteristics of the  bronze drawing  and slow drying (14-20 hours).

There  particular rifling  and the design of the format make the pasta  absorb  the seasoning perfectly.  The flagpoles are great  to make pasta salads,  with seasonal vegetable sauces or with a traditional meat sauce with tomato sauce.
