Olive groves:  Olives 20/25 years, in the hilly area

Cultivar:  Frantoio 50%, Moraiolo 20%, Leccino 30%

Harvest period:  From 15th to 30th October

Appearance:  Yellow with green reflections

On the nose:  Fruity with vegetal notes

On the palate:  Medium-light bitterness and well pronounced spicy, with hints of ripe olive and flavors of sweet almond

Pairings:  Dishes such as roast rabbit, amberjack marinades, roasted turbot, grilled cuttlefish, barley salads, dishes with shellfish

Production area: Imperia 

Cultivar:  100% Taggiasca

Appearance: The Tumaì  it has a golden yellow color with light green shades.

On the nose:  fine and harmonious, with light vegetal notes of wild herbs;

On the palate:  it is an oil with a broad and complex flavor, rich in tones of artichoke and green tomato.

Pairings: Its use is ideal on salads, with mozzarella and also on pizza, to season cold and hot dishes with a delicate structure raw.
